So we slowed down and learned the actual mechanics of it — what the size labels mean, why previously-frozen is usually the better choice, why shrimp turns rubbery in a sixty-second window, and what a relaxed "C" curl versus a tight "O" is actually telling you about doneness. Once we understood that, five dishes stopped being five separate recipes to memorize and became five applications of the same small set of rules.
That shift is also where the rest of it came from.
